Buffalo Mozzarella

Macroom Buffalo Mozzarella is produced from our herd of Grass Fed Water Buffalo, based in Macroom, County Cork. Our mozzarella is a fresh, soft, semi elastic textured cheese. The process involves heating the curd to a point where it can be stretched and formed into various shapes.

Buffalo Ricotta

Buffalo Ricotta is a cheese which is obtained from the whey of Buffalo Milk. It emanates from the liquid part that separates from the curd when making Buffalo Mozzarella Cheese.

It is pearly white and firm with a moist consistency.
It has a delicate, characteristic aroma and is suitable for sweet and savoury desserts.

Buffalo Greek Style Cheese

Our Buffalo Greek Style Cheese, is our local rendition of a classic Mediterranean Cheese. It is a mild and balanced cheese and it’s salted flavour is a welcome addition to any meal.

Cypriot Style Grilling Cheese

Our Cypriot Style Grilling Cheese, is a delicious firm cheese that holds it’s shape well when grilled, but yet remains ‘squeaky’ soft.

As a result of the Buffalo Milk used to make this cheese, the flavour is earthy and sweet.

Buffalo Burrata

We have developed an Irish version of Burrata Cheese which incorporates both the milk and cream from our herd of Grass Fed Water Buffalo. This has led to an exquisite product, maximising the flavour of our award winning Buffalo Mozzarella and supplemented by the magnificent addition of cream to enhance the flavour and profile of our cheese. Burrata originated as an Italian Buffalo Milk Cheese made from Mozzarella and cream. The outer casing is solid cheese while the inside contains cream, giving it an unusual soft texture best described as a gooey mixture of cream and small cheese curds. Burrata distinguishes itself from Mozzarella, as the stretched curd is used to create a pouch that is then filled with a mixture of cream and fresh curds. The pouch is then sealed off to create Burrata’s signature dumpling-like shape. The nice thing about Burrata Cheese, is the supreme balance it achieves in both flavour and texture. Burrata has similar flavour notes as Fresh Mozzarella Cheese, but with a more decadent & concentrated milky taste and sweetness, reminiscent of rich cream.
