Milking cows had been the Lynch family business for generations until a decline in the market forced us to consider other means of making a living.
So, we turned our attention to buffaloes!
Every other cheese was being made in Ireland, from sheep milk and goat milk, but there was nobody making buffalo cheese. So, in 2009, we took the plunge and imported 31 buffaloes from Northern Italy, bringing them back to roam freely on our beautiful, lush farmlands in West Cork. Now we have over 700!
