Panfried Garlic Bread with Roast Marinated Peppers & Macroom Buffalo Burrata

Serves 2

Preparation Time: 20 mins (add overnight marinating)/Cooking Time: 10 mins/Total Time: 30 mins +overnight marinade

Ingredients:

3 peppers

1 slice of Sourdough Bread

2 cloves garlic, finely chopped

3 tbsp olive oil, plus extra for drizzle

Bunch of fresh thyme

150g Macroom Buffalo Burrata

Sea Salt and freshly ground Black Pepper

Method:

  1. Slice 1 Red Pepper & 2 Yellow Peppers

  2. Add a Bunch of Thyme, 3 x Garlic Cloves, Sea Salt & A Drizzle of Olive Oil

  3. Roast in the Oven at 180˚ for 10 minutes

  4. Drizzle over some more Olive Oil and Marinade Overnight

  5. Pan Fry 1 slice of Sourdough Bread in a Hot Pan, on Both Sides

  6. Take the pieces of Roast, Marinated Garlic and spread on the Toasted Bread

  7. Place the Roasted Peppers on top of the Garlic Toast

  8. Cut the Macroom Buffalo Burrata in half and place on the peppers. Add some Micro Herbs, Sea Salt, Black Pepper & enjoy!
